The Jacksonian Luncheon is a tasty complimentary lunch with historical overtones and will be created by Nora Wetzel of Educated Palate and Ruth Varisco of the Nunez Culinary Department. Sponsored by the Louisiana Seafood Promotion & Marketing Board
Menu: Louisiana Oyster Boats (Oysters in buttered, toasted pistolettes), Gulf of Mexico Red Snapper in butter-lemon sauce, topped with pecans, Field Salad of greens, sweet peppers, artichoke hearts tossed in a Creole mustard vinaigrette and topped with cheese, English Trifle (Fresh fruit layered with cake, crème Anglaise and whipped cream) – and possibly an additional surprise.
Chef Nora Wetzel is an American Culinary Federation certified chef. She has worked on special projects with Julia Child, John Folse and Emeril Lagasse to name a few. She operates her own full service catering and event planning company called Educated Palate. She spent 10 years at the Historic Herman-Grimma House in the 19th century open-hearth cooking program which was led by a foodways archeologist. She is the immediate past president of the Louisiana Historical Society, vice-president of Sociedad Espanola and member of the Preservation Resource Center and Louisiana Landmarks Society, contracting as the liaison for events at Pitot House. For the past 8 years she has been researching French regional cuisine and recipes for her lectures to L’Union Française’s cultural series and catering their tasting buffets.
Chef Ruth Varisco is the Program Manager of the Nunez Community College Culinary Arts Program and was named "2018 Chef of the Year" by the New Orleans Chapter of the American Culinary Federation.
